Good morning dear all mummies!! Start my working day again after return from holiday for few days~~ slept at 12 mid night and woke up 4am this morning...(luckily my power still active!! Haha! Really dun know how can i made it) Breakfast: 40 mins milk bun again 40 mins method soft milk bun 1 teaspoon instant yeast 1 tablespoon brown sugar (i used muscovado) 1 tablespoon caster sugar ( i used muscovado) 1/3 cup warm milk 2 tablespoon olive oil 1 cup bread flour + 2 tablespoon cake flour and 1 tablespoon wholemeal flour 1/2 teaspoon salt ( i used pinch of salt only) 1 tablespoon beaten egg remaining egg add in some milk for egg wash Steps 1. Add instant yeast, brown sugar, caster sugar, olive oil, milk into a mixing bowl, stirred it and rest aside for 15 mins till you will see floating foam as showed in the picture. 2. Mix in flour, salt and 1 tablespoon of beaten egg then use a spatula to fold and mix well the mixture into a dough form. 3. Then use electric kneading hook to knead for about 5-10 mins or till well combined. 4. Then take out the dough and hand knead for another 1-2 mins. 5. Roll, cut and shape into 6 small dough. 6. Grease little oil on the baking pan and line the dough in, cover with wet cloth and let it proof for about 10 mins. 7. Brush egg wash onto the bread. 8. Bake at pre heat oven at 200 degrees C for 15mins (baking time vary for different oven) Lunch: Tomato shrimp rice 3 tablespoon mix grains (brown rice, millet, quinoa) 3 tablespoon tomato puree 1/3 cup of water Steam the mix grains for 15mins prior adding other meats and vegetable at your preferences as the brown rice is not easily cooked till soft in short time. add in shrimp and green peas and 2 cherry tomatoes on the top of the cooked rice. sprinkle some pepper and salt. Steam for 10 mins and ready to serve. Teatime: pumpkin doughnut Pumpkin 30g A: soy milk/milk 30g, sugar 10g, vegetable oil 5g, salt ~ rice size B: low protein/cake flour 50g, potato starch 5g, aluminum free baking powder 1/2 tsp 1) Steam the pumpkin and mashed it with fork or cling wrap it and mash by hand (i just use my tokebi hand blender blend it with sugar) 2) Put the mashed pumpkin in a big bowl and add in the ingredients A, mix them well. 3) Sift in the ingredients B and form a dough. Divide the dough into 3 portions. Roll it into stick form, Join the both ends together to form a ring. **** may use some flour to dust your hand if dough is too sticky. 4) deep fry in hot oil with low heat till both sides golden brown.
