Great little sauce for lamb, beef and game! Makes 2 portions! Ingredients : 8 table spoons of good red wine 2 table spoon of good balsamic vinegar 2 bay leaves 1 teaspoon of chopped shallots 1 table spoon of chopped carrots 1 table spoon of unsalted butter Recipe: medium heavy bottom stainless steel pan ( I use ALL CLAD)..do not use non stick pan please, you will never make a good sauce!! Add grapeseed oil and butter, heat up and add the seasoned meat! Brown it on both sides( 2-4 minutes), preheat oven to 350F and switch the meat to another pan ( This part my wife loves NOT) too many pans to clean!!LOL Cook to desired doneness! Meanwhile get rid of all the liquid in the stove top pan and add the wine and balsamic along with rest of the ingredients, except the butter! Simmer till reduced to syrupy consistency! Take off the stove and mix in cold butter! Strain through fine strainer and serve with the meat! Season it with salt and pepper if necessary ! Bon Apetite, Chef Kamil PS: If I use lamb I add rosemary and fresh mint to the wine as well, if I use game, I like to use, cinammon, tarragon, sage and instead of red wine I use sweet Sherry wine or port! For steak, I season it with extra cracked peppercorns!
