Grilled chicken with Lemon, Corriander, Garlic & Chilli with a fresh bean sprout salad!! So before our devine desert. I cooked up these beauties on the barbecue grill with salad and garlic bread. They were very much a crowd pleaser with the family. The aromatic Asian inspired flavours work so well together. You can pre- prepare these the day before and will even better. 4 whole chicken breasts 1 cup fresh lemon juice 1 table spoon fresh chilli flakes 3 large cloves garlic crushed 2 tablespoons honey 1-2 table spoon worschister sauce 2 table spoons ketchup manis 1 heaped teaspoon French mustard. 1/4 cup fresh chopped Corriander 2 tablespoons fresh chopped basil and chives. Place all math are ingredients into a large bowl and mix till combined. You can leave your breasts whole or halved then score on both sides. Place into marinade for at least 30 minutes. Ideal to leave overnight if you can. Place onto a hot grill and char grill on both sides till cooked through. Leave to sit for 5 minutes. Salad: 1 tin chickpeas drained 1 tin mixed beans drained 4 medium size tomatoes thinly sliced 1-2 handfuls of bean sprouts Place in a large salad bowl. Lightly salted. Add 1-2 table spoons olive oil and red wine vinegar or balsamic. Toss till combined. Mustard and herb sauce: 4 heaped tablespoons Dijon mustard 1 tablespoons chopped parsley 1 teaspoon olive oil Salt and pepper to season Squeeze lemon juice Serve with fresh garlic bread and enjoy. Perfect at barbecues or to entertain the family at home. Healthy and fresh. Enjoy!!
