Guys this weekend my cook was very successful. Without my guru I was able to finally control the temp of my LSIS with the level of water in my water chamber and using both dampers. Once the temp surpassed the 250 mark, I closed down one damper and partially closed the other. If I needed to raise the temp, opened both ball valves and opened smoke stack damper all the way to draw the air. Throughout the smoke, I maintained 225 thru 250.Anyways the instructions Chris has for this smoker is spot on! Just wanted to share some pics and a video. Ribs, chicken cordon bleu fatty, chicken thighs, chicken breast, and broccoli casserole. By the way, the chicken was for a spread we had at work today. Used my sauce Uncle Foxxs and Jerrods BBQ Buckwild sauce. It was great!
