I am thankful for all of those things, along with health, happiness, and the opportunity to do the things I love! I am thankful for one additional thing today... Lard! I know what youre thinking... Ive had a few people ask me today, WHY are you making LARD? Well, for one, we received a generous boxful of pork fat from Chad at Diamond Willow Corral where he raises the healthiest pigs around. And mainly because it is one of the healthiest fats you can eat, despite the bad rap it has received in recent decades. I have a lot more to process and its WAY more work than I ever thought it would be, but I am just thrilled to have access to this kind of nutritious goodness!
