HELLLP!!!!!!! Okay, FB. Hoping someone out there can help me. You may know I love to cook (yes, I could spend night and day in my kitchen) and maybe you know I have grand children (5). That combination means PIZZA, which is shamefully expensive and/or full of needless extra stuff. So, I have been trying to make a homemade pizza, including crust. This is not my first attempt.....and not my first failure. Im not much of a baker, but Id like to think I can follow basic instructions. But these homemade pizzas just arent working out. Todays attempts resulted in a nice tasting pizza (used tomato sauce and fresh tomato), but I had a gum line. So, I raised the heat from 425 to 450 and preheated my pizza stone. I used tomato paste and no wet ingredients. No gum line, but everything was too dry (hence the olive oil drizzle). It was edible -- at least for me -- but I wouldnt feed it to anyone else. I am using a very basic pizza crust recip 4 cups all-purpose flour Kosher salt EVO olive oil 1 Tbsp. yeast in warm water Mixed in Kitchen aid till just combined. Dough is very wet (sticky). Put in lightly oiled bowl and cover. Let rise. Push down and separate into balls. Do I just have too high an expectation for homemade pizza? Hope someone out there can help or share with someone who can help.
