"Dear healthy juice consumer: in response to the april 17 article in the new york times i want to help illuminate any confusion on the value of fresh juice that has not been processed using high pressure pascalization HPP. it is my opinion that any juice company using the HPP method is concerned primarily with finding a way to increase the shelf life of their product and in so doing they have to create formulas that are more acidic for the pressurization process to work. this means that any consideration for more alkalizing formulas has to overlooked. whether or not scientific studies have been done to determine to see if enzymes and vitamins have been destroyed is irrelevant. my primary goal is to put the freshest most unprocessed juice in the hands of the consumer as possible. when you drink a hpp juice with a shelf life of 27 days you may be drinking a juice that is 27 days old. to best of my knowledge, companies that use HPP do not have to state that they do. they can also state that their product is raw, organic and unpasteurized. this is very concerning to me as a consumer. the best thing that can happen for me as a business owner is when a leading competior does something in their practice that will alienate our shared consumer base. perceptions will shift anytime a company does something that puts in question the biological quality and the pristine nature of what truly raw/unprocessed juice should be." marcus antebi (founder & CEO, juice press)
