Divide the bean mixture among the taco shells and top with the lettuce, Cheddar, and remaining ¼ cup of salsa. 2. Baked Potatoes With Broccoli and Sour Cream Ingredients 4 medium russet potatoes 1 16-ounce package frozen broccoli 2 tablespoons butter Kosher salt and black pepper 1/4 cup sour cream Directions Prick the potatoes several times with a fork. Microwave on high until tender and a fork easily slides into the center, 12 to 15 minutes. Transfer the potatoes to a bowl and cover with a plate or foil to keep warm. In a medium microwave-proof bowl, combine the broccoli, butter, ½ teaspoon salt, and ¼ teaspoon pepper. Microwave on high for 3 minutes, stir once, then microwave until hot, 3 to 4 minutes more. Split the potatoes (be careful of the steam). Top with the broccoli mixture and sour cream and sprinkle with ¼ teaspoon pepper. 3. Ham and Pineapple Pita Pizzas Ingredients 4 pitas 8 ounces sliced deli ham 1 8-ounce ball fresh mozzarella, sliced 1 8-ounce can pineapple chunks, drained Directions Heat oven to 425° F. Place the pitas on a baking sheet. Layer with the ham, mozzarella, and pineapple. Bake until the pitas are crisp and the cheese has melted, 10 to 12 minutes. 4. Nutella and Raspberry Sandwiches Ingredients 8 slices white bread 1/2 cup Nutella 2 6-ounce packages fresh raspberries Directions Spread 4 slices of bread with the Nutella. Top with the raspberries and sandwich with the remaining slices of bread. Cut each sandwich into 4 pieces. 5. Chocolate-Banana Sundae Ingredients 4 small bananas 1 pint vanilla ice cream 1/4 cup chocolate sauce 1/4 cup sweetened shredded coconut Directions Peel and slice the bananas. Scoop the ice cream into 4 bowls. Top with the bananas, chocolate sauce, and coconut.
