Hangi in my crockpot. Next time I am going to use some wood chips at the bottom to get the smoke flavour going. Balls of rolled up tin foil or something to keep the parcel off the bottom. I have some steel egg cups so I used those and a couple of balls. I then put three sheets of tinfoil folded together to make one large one to that I - spread out cabbage leaves - on the cabbage leaves kumera (sweet potato), peeled and chopped potatoes, cut up chunks of pumpkin, chicken thighs and lamb ribs. I had seasoned the lamb ribs in some garlic butter I had left over. Wrap up the foil and put enough water to reach 2/3 up the side of the rolled tinfioil balls. Place the foil package on top, place a wet towel over and put on the lid. This was cooked in about 5 hours.
