Have you ever tried a Strawberry Lemonade cupcake? You probably should. Its ridiculously yummy. I made these last night, and they were a huge hit with my neighbors. Mix Strawberry preserves with lemon juice until you find the right taste and strength in your mixture. I added 1 table spoon of lime zest, make a basic cake mix with bleached white flour, sugar, eggs, oil, baking powder or you can use a white boxed cake mix(follow the instructions on the cake mix box and add your mixture to that.), add your strawberry lemonade mixture into your cake mixture and whisk thoroughly, being sure to fully blend without any clumps of anything. Add your cake mixture into muffin or cupcake liners on a cupcake pan. Bake at 325 for 30 minutes, or until you can pull a knife or toothpick out totally clean. Allow to sit until 100% cooled. If the cupcakes are still warm, your frosting will melt and slide off of the cupcakes. Once cooled, I made a homemade frosting 1 cup butter, softened 3 1/2 cups confectioners sugar 1/8 teaspoon salt 1 teaspoon milk 1 teaspoon vanilla extract In a clean mixing bowl- combine butter, sugar and salt. Beat until fully blended, then add the milk and vanilla. Beat for an additional 3 to 5 minutes or until smooth and creamy. You can use an icing bag as I have done for a more delicate design, or you can simple cut a very very tiny hole in the bottom corner of a ziplock back and fill that bag with your frosting. Then from there, simply use it like you would an icing bag. I added white chocolate shavings while the frosting was still wet, and had not yet set.
