Here are a few recipes I said I would share with friends, so thought I would post for others too! Stuffed Peppers: Peppers Stuffed with Macaroni 6 green peppers 1 cup cooked elbows macaroni cooked. 1/3 lb. sharp cheddar cheese grated 1 cup soft bread crumbs ¼ t. Worcestershire sauce ¼ t. salt Dash salt 1 cup or more cooked tomatoes Cut and slice stem from top of each pepper and cook in boiling water 5 minutes. Drain. Mix remaining ingredients, save 1/3 of cheese for top. Fill peppers with mixture, stand upright in pan and sprinkle remaining cheese on top. Bake in 350 oven for 30 minutes. Serves 6 Heavenly baked Cabbage: Heavenly Baked Cabbage and Tomato Casserole 1 lb. head cabbage, shredded (3½ -4 cups) ½ cup water 3 T. vegetable oil ½ cup chopped onion 3 T. flour 1 tsp. salt 1/8 tsp. pepper ¼ tsp. marjoram 2 ½ to 4 cups canned tomatoes including juice.( May substitute fresh skinned tomatoes broken up) 1/3 cup stuffed green olives, sliced 1 cup cracker crumbs 1 cup grated cheddar cheese (4 oz. ) Wash cabbage and cut into quarters. Discard core and shredded coarsely. Cook in water for about 8 minutes, until tender, then drain. Heat oil in sauce pan. Add onion and sauté until transparent. Blend in flour, salt, pepper, marjoram and stir until oil and flour form smooth paste. Add tomatoes with juice and cook stirring until slightly thickened, then add sliced olives. Place 1/3 of tomato mixture in individual casserole. Add 1 part cabbage, repeat. Cover with cracker crumbs and cheese. Bake in a preheated 350 oven for 25 minutes. Serves 6.
