Here at the Chambres dhôtes we are looking forward to a stroll through the morning mist to enjoy the changing Autumn colours, and then to warming up with this delicious recipe! Two Tone Soup Any combination of soups can be used for this fun and effective serving idea for soup, as long as the soups you choose to use have a similar consistency and there is a good colour contrast. Orangy Beetroot Soup A splash of Olive oil. One large onion, chopped. A clove of garlic, finely chopped. Grated rind of one orange. Four large beetroot, cooked and roughly chopped up. The juice of two oranges. 250ml chicken stock Cream. Chopped Spring onions in the soup and presentation. Heat the oil in a saucepan over medium heat. Fry the Onions, garlic and orange rind until tender. Add the cooked beetroot and fry for 3 minutes. Add the orange juice and chicken stock and spring onion and boil gently for 15 minutes with the lid on. Remove from heat, pour into a blender and blend until smooth, or use an electric stick blender directly in the saucepan. Season to taste. Curried Butternut Soup A splash of olive oil. One large onion, chopped. Two large carrots, peeled and grated. One clove of garlic, finely chopped. 250ml chicken stock. 15ml Curry powder. One can of Coconut Cream Three cups of butternut. Heat the oil in a saucepan over medium heat. Add the Onions, garlic, carrots and curry powder and fry gently for about ten minutes until tender. Add the chopped butternut and chicken stock. Bring to the boil and simmer, with the lid on, for about 30 minutes until the carrots and butternut are tender. Remove from heat and blend in a blender or use an electric stick blender directly in the saucepan. Season to taste Add one tin of Coconut Cream, or part thereof until the same consistency as the Beetroot soup. Once both soups are prepared, adjust them to the same thick consistency by adding cream, the thicker the better. To serve, pour the soups into separate jugs and carefully pour both soups at the same time into a soup plate until they meet in the middle creating a dividing line. Decorate with extra chives, or coriander and edible flowers. Add parmesan shavings it you like.
