Here is a recipe that does not have a picture. My granddaughter Tiffany loves them. CARROT COOKIES Makes 3 dozen, 350 degrees oven for 15 minutes. 2 cups of all purpose flour 2 teaspoons of baking powder 1/2 teaspoon of salt 1 cup (1 stick ) butter or margarine 3/4 cup of sugar 1 egg 1 cup of mashed cooked carrots 2 teaspoons of grated orange rind 1 teaspoon of vanilla 1 package ( 8 ounces ) butterscotch flavoured pieces. Method: 1. Sift flour, baking powder and salt on to waxed paper. 2. Beat butter or margarine and sugar until fluffy in a large bowl with an electric mixer at medium speed, beat in egg until smooth. 3. Turn mixer to lowest speed: blend in carrots, orange rind and vanilla till smooth: stir in butterscotch pieces until well blended. 4. Drop by rounded teaspoonfuls, 2 inches apart, onto cookie sheets. 5. Bake in a moderate oven at 350 degrees for 15 minutes, or until golden brown. 6. Cool completely before storing g in a metal container in between sheets of waxed paper. Note: These cookies are not crispy. They are soft. Kids enjoy these cookies, and a great way to get them to eat a veggie. These cookies are habit forming too.
