Here is another Original recipe! SHERRY INFUSED LOBSTER SALAD; •Picked lobster meat from two 1 to 1 1/2 lb lobsters •1 tablespoon of mayo •1 teaspoon of sherry vinegar • Zest of 1 lemon • Juice of 1/2 a lemon • 1/4 teaspoon black pepper •1 shallot minced •1 stalk of celery, finely minced •1 teaspoon of fresh lemon thyme, minced Keep picked lobster meat refrigerated and combine all the rest of the ingredients in a medium sized bowl and whisk together well, fold in lobster meat and chill, grill 2 long, top split frank rolls with butter and fill with the lobster salad. If you would like to make a hot lobster roll, omit the mayo and heat 2 tablespoons of butter in a medium sauté pan, add all the ingredients except the lobster and the sherry vinegar, cook for 5 minutes and add 1 tablespoon of sherry COOKING WINE and stir well, then add the lobster and cook 1-2 minutes just to heat it through, no longer or it will be overdone ENJOY!
