Here is our kapampangan version of chicken pastel. This is one of my fave dish growing up. We add mushrooms, water chestnuts, quail eggs, hotdogs, raisins and cheese. Pwede nga cyang sahog sa pasta minus the raisins and water chestnuts. Eto po recipe: 1 kilo of chicken(i use yung leg part cheaper pero ung iba mix ng leg at breast) 1 small can tomato sauce 1/2 tsp salt A bit of water 2 tbsp butter 3 cloves of garlic minced 1 small onion 1 can sliced water chestnut 1 dozen boiled quail eggs 1 can mushrooms or about 5 fresh mushrooms sliced 2 hotdogs sliced in ovals 1 thin slice of quickmelt cheese 1 can cream of mushroom 1 small can of cream 10-15 pieces of raisins or 1 small box Procedure Melt 1 tbsp of butter and saute half the garlic. Add the chicken, tomato sauce, a bit of water so the chicken wont dry out, salt and simmer until chicken is cooked. Remove chicken from the tomato sauce, let cool. Set the tomato sauce aside. Once the chicken has cooled down, debone the chicken and cut in bit-sized pieces(1/2-2 inches cguro) On a separate sauce pan, melt remaining butter, sauté garlic until golden brown, add onions until clear, add hotdogs and let them fry for a bit. Add chicken, mushrooms, water chestnuts and about 4-5 tbsp of the tomato sauce that was set aside earlier and let it simmer for about 5 mins. Add the cream of mushroom and cream and a little bit water on the cans to rinse the remaining cream. Add the raisins. Turn to low heat and simmer for about 7-10 mins until it boils. Add the quickmelt cheese. Add salt depending on your taste. You can add more of the tomato sauce if you wish depending on your taste. The sauce color usually turns pink due to the red hotdogs sa Pinas. Dito light orange lang tlga ang kulay kahit nilagay ko na lahat ung tomato sauce. Pwede omit ang raisins. Meron kase mga ayaw sa raisins, add na lang ng pinch of sugar. Enjoy!
