Heres a Sunday Roast idea inspired by the rainbow! Toss chopped mixed veggies and herbs (we used carrots, fennel, mushrooms, zucchini, tomatoes, shallots, garlic and tarragon) with sea salt, black pepper and olive oil. Roast at 220C / 425 F for about 30-40 min until tender. Purée half the veggies to make a sauce and mix with whole grain pasta and the remaining roasted veggie pieces. Serve with some crumbed goat cheese for an extra delicious & nutritious family meal. Happy Sunday!
