These tacos are topped with both Swiss cheese and feta -- unusual, yes, but extremely tasty and completely guilt-free... Prep: 15 minutes Cook: 5 minutes Ingredients: Sauce 1 tbsp. fat-free plain Greek yogurt 1/2 tsp. ranch dressing/dip seasoning mix 1/8 tsp. cayenne pepper 1 drop lime juice Dash chili powder Tacos 3 oz. cooked and chopped skinless chicken breast 1/4 cup chopped green bell pepper 2 tbsp. chopped onion Two 6-inch high-fiber flour tortillas with about 50 calories each (like La Tortilla Factory Mini SoftWraps) 1/4 cup shredded lettuce 1 slice Sargento Reduced Fat Swiss Cheese, torn into small pieces 1 tbsp. crumbled reduced-fat feta cheese 2 tbsp. pico de gallo or fresh salsa Directions: In a small bowl, stir sauce ingredients until uniform. Bring a skillet sprayed with nonstick spray to medium-high heat. Add chicken, bell pepper, and onion. Cook and stir until chicken is hot and veggies have slightly softened, about 3 minutes.
