Heres an easy and delicious quickie for a start to your fabulous week ahead Veggie Pizza - INGREDIENTS - 2 ready-made pizza bases 100-150 gm mozzarella or pizza cheese - grated (1-1½ cups) a few olives, 2-3 chopped jalapenos 1 tsp olive oil to drizzle ½ yellow or ½ green capsicum - cut into ½” squares ½ onion - cut into ½” squares, 1 tomato - cut into 8 pieces and pulp removed 2 tbsp corn kernels or 3-4 baby corns - cut into thin long slices 1 tbsp white vinegar, ½ tsp salt, ¼ tsp pepper, ½ tsp oregano, ½ tsp red chilli flakes 1 tbsp oil, 1 tsp garlic paste ½ cup ready-made tomato puree, 2 tbsp tomato ketchup, 1 tsp oregano, ½ tsp salt and ¼ tsp pepper METHOD - 1. For tomato spread, put all ingredients of tomato spread in a bowl. Microwave for 2½ minutes. 2. Brush the bottom of pizza with olive oil, place pizza with bottom side up on the high rack and grill for 3 minutes or till crisp. Remove from oven. 3. Put tomato spread on the side which has not been grilled. Sprinkle a little cheese. Arrange most of the vegetables. 4. Sprinkle the remaining cheese. Arrange remaining vegetables, olives and jalapenos. Sprinkle some oregano and red chilli flakes. Drizzle olive oil on the cheese and vegetables. 5. Grill for 4 minutes or till cheese melts. Serve hot.
