Heres my meatball recipe. Somehow, I think a chef like Chris Conlon can probably make them better, but Ive always liked these. Really easy to make. 1 pound ground beef 1 pound bulk Italian sausage 2 teaspoons dry minced onion (I got a big package of this from Costco) 1/2 teaspoon garlic powder 1/2 cup parmesan cheese (I dont use the shredded kind-I get the grated kind. Again, Costco is your friend-they sell a big jug of this stuff in the same aisle they sell marinara sauce. Its not refrigerated, but you do have to refrigerate it after you open it. Ive also bought a block of Parmesan and run it through the food processor, which works GREAT!) 2 eggs 1/2 teaspoon salt 1/4 teaspoon pepper Mix everything together in a big bowl. With your hands. Really get in there and incorporate everything. Then I take this and roll it into 20 meatballs. Line them up neatly on a baking sheet. I line my baking sheet with parchment paper, but you dont have to. Just makes it easier to pull them off when they are cooked. Bake at 375 degrees for 17-20 minutes until the meatballs are done all the way through. They might look weird, and your pan will probably be a mess. Dont worry-its the cheese that melts out during the cooking process. I like this with just a little Organic (or better yet, homemade) marinara sauce. (I can post my sauce recipe also. Its the bomb) Variations: Use all ground beef, no sausage. For no dairy phase, Instead of using the parmesan cheese, use pork rinds that you put through the food processor to make into little crumbs.
