Here’s Carla’s simple sauerkraut recipe: Ingredients - One cabbage - 1 tablespoon of salt. - 1 teaspoon of caraway seeds. Chop the cabbage into fine, even size pieces. Add salt and spice. Pound the cabbage mixture until it is quite juicy and then pack it into an airtight container. Make sure the cabbage is fully submerged in the juices. Leave it to ferment in a dark place for at least one week. The sauerkraut will become more sour as time goes on. Store in the fridge.
