Heres a little info from Mike West and Alliya Lovestrand of Sal & Piper: We established Sal & Piper to give our community the opportunity to enjoy the best of what our local farms produce. Inspired by the diversity of agriculture that has sprung up in our food-shed, Sal & Piper strives to bring an imaginative dining experience to Cambridge, NY and our neighboring towns in New York and Vermont. The menu for the evening looks something like this: Browsing: -Pork rillettes with caramelized onions and grainy mustard on sourdough -Duxelle with caramelized onions and grainy mustard on sourdough -Thai pork broth shooters 1st course: -Smoked pig with kimchi -Fried risotto cakes with creamed leeks 2nd course: -Kale and daikon with fish sauce and tamari -Crispy oven potatoes and sweet potatoes with aioli Dessert: -Chocolate truffles -Caramel popcorn
