Hi friends, Allow me to give you some informations about the use of seeds in breads. In many occasions, when making special breads one use seeds (special means here, for me, classical breads with something in the dough: seeds, vegetables, bacon, cheeses, etc). Sometimes its just for the top of the breads, like buns for example, but sometimes its added in the dough as an important ingredient because it change the taste of the bread. So when making special bread with seeds is quite easy, just add seeds to the dough, usually at the end of kneading and thats all. In a way yes, it is, but a professional baker will tell you that there is a better way: before adding seeds you should roast (torréfier in French) them, the taste will be much much better (actually they dont tell, its a baker secret!). What is roasting? Its simply to put the seeds, on a flat pastry plate, in the oven at 150°C (300°F) for about 10 minutes. During this time seeds dont cook, but dry, and concentrate more flavor. Its very easy at the end, just take care of your seeds in the oven (watch out, they should not burn) a few minutes and your bread with seeds will be better and tastier. Very skilly bakers do something more, after roasting they put hot seeds in a bowl with the same weight of water. This is because roasted seeds will take some water from your dough, and dry it, if seeds are added as this. Watering them, stop this effect. Why is it not necessary to roast seeds for buns? Because seeds, on top of the buns, will gently roast themselves during the cooking time of the buns. Note: This process of roasting, in a more sophisticated way, is quite common in many things we use everyday, coffee or cocoa for example.
