Holy Carrots!...our property backs right up to local farmland, and the generous farmers allow their neighbors to glean the veggies after harvest. While potatoes are generally what gets planted in that field, this year we got tons of carrots as well! I blanched and froze a lot, then made several gallons of carrot soup - literally! Went with basic carrot, coconut milk/carrot/chili paste and spicy curry/carrot. They are so pretty and taste so good! It took me many hours, but now they are frozen in handy dinner-size packs... :) -Patti
