Hot Jam’rs Cherrie & Plum Fire sauce Ingredients 2 ½ cups fresh plums pitted & quartered plus ½ cup juice from cutting plums. 1 cup fresh cherries pitted left whole 1 ½ cups cane sugar ½ tsp Allspice ½-1 tbs fresh ghost pepper + seeds finely chopped, for desired heat level. 1/8 tsp lemon oil extract ¾ tsp Almond oil extract Optional 1/8 tsp salt for flavor enhancement; add during cooking process. Measure out first five ingredients into medium/large saucepan, turn on heat to low and cook covered for 15 minutes until sugar is dissolved, stirring occasionally. Increase heat to medium and cook uncovered for 25-37 minutes stirring occasionally until liquid portion is reduced leaving 2 ¼ to 2 ½ cups. Once removed from heat stir in both oil extracts and chill in refrigerator for 3-5 hours. You can use fresh or jar for later use. For a smoother sauce/jam purée in blender until desired consistency is achieved. If planning to use as a BBQ sauce add ½ cup honey to the mix and blend. No need to cook it into the mix; grilling will take care of that. Bottle and process jam/sauce according to recommended water bath or pressure cooker instructions. Enjoy!
