I bought a vegetable spiralizer last summer and have used it for sweet potatoes in curry, cucumbers for salad, and zucchini spirals and ribbons for raw pesto and lasagna (and curly fries ;) ) but Monday night one of my Weight Watchers members said her sister uses the zucchini noodles with hot broth for soup. This is what I came up with yesterday and its amazing. Zucchini Noodle Soup will be my new obsession.I sautéed onion, garlic, leeks, and a few mushrooms in coconut oil. Added two cups of vegetable stock, a 1/2 teaspoon of spicy chili sauce, chopped fresh tomatoes, carrots, peas (with pods) and chopped chives from my garden, and brought to a boil. I added the spiralized zucchini and ladled into a bowl and finished with chopped cilantro and a splash of soy sauce and rice vinegar. Bliss in a bowl.
