I dont normally post on here but felt I needed to share this recipe as it was amazing! SC COCONUT, TOMATO AND LENTIL DAHL! Im not one for real spicy foods but love using different spices. You cant go wrong with this!!! 2 tblsp veg oil Large onion 1 clove garlic minced 1 diced carrot 2 tsp cumin 2 tsp yellow mustard seeds Tsp grated ginger Tsp turmeric Tsp mild chilli powder( optional) Tsp garam masala 200 grams red lentils 400 ml vegetable stock 400 ml tin of coconut milk 400 g tin of chopped tomatoes Salt and pepper Coriander to garnish Place all ingredients into slow cooker, cover and cook on low for 4 - 6 hours. I had mine cooking for longer as I put it on when I left for work and it was fine. I served with a dollop of natural yogurt and bought Indian chapatis which I cut into quarters and lightly fried to dip in the Dahl. Delish!!!! Xxxx
