I have a lot of weird hobbies including rockhounding, mushroom hunting, wild food foraging and fermenting. Sometimes they intersect with awesome results! For example, I tried fermenting some chicken-of-the-woods mushroom that I found last fall in a simple 2% brine. No boiling or anything. Tried them this weekend and they are amazing! Still tender and full of flavor and the color hasnt changed at all! Who knew you could ferment raw mushrooms! Now this is another example of a crossover experiment: I harvested some Devils Club root from the woods by my house. After a few experiments with making ginger beer / soda, I wanted to see if I could make a beverage that captures the subtle flavors and medicinal power of this sacred herb so I am using the ginger bug technique but using the devils club root instead. 5 days of adding root and sugar to this jar of water and I now have a very lively bug for making Devils Club Soda. :) It smells really good already...
