I have been doing awesome on my diet. Ive lost around 30 lbs in the past few months.I even managed to lose 2 lbs during Thanksgiving....first time thats ever happened! Michael and I were very, very bad when we chose what to cook for diner tonight, though. We made this awesome new recipe I found. I sauteed a few cups of onions, a couple of pieces of thick cut, apple wood bacon diced up, some bell pepper, tomatoes and a few links of Jimmy Dean sausage crumbled up (is there any other kind :) ) I cooked the hash browns in my iron skillet until they were done, seasoned them with a little salt, pepper and a garlic and parsley blend. Added my onion, sausage, bacon and veggie blend back in and mixed it well; made 4 indentations in the hash browns and cracked 4 eggs and added one per indention. I put my skillet in the oven for about 10 minutes or so on 325 and then turned the broiler on for a minute or so. I did do better with the grits; I use chicken broth to cook them in and I use those handy flavored popcorn sprinkles to flavor them with (LOVE the White Cheddar and the Bacon Cheddar) so I did save a few calories on my grits. OMG...yall have got to try this. I swear, it was pure Heaven on a plate!
