I have had a couple of messages lately asking me about my super easy lunchbox sushi. Here are the three components that I make in advance and store in the fridge for the week. Rice: Add 1/4 of a cup of apple cider vinegar to hot cooked brown rice and leave it to sit with lid on for at least 10min. Tuna: Always purchase sustainably fished tuna. Mix a tin with a few spoons of Mayo (I make my own but if you purchase make sure it contains no sugar or vegetable oil!) or Greek yoghurt. Nori sheets: I buy this brand from woolies for around $2.50 for 10 sheets which makes 20 rolls. My kids love them just like this. I have it all waiting in the fridge to whip up at night or in the morning. Once you have it all ready it is actually easier than making sandwiches! You can add heaps of different fillings but simple is easy and quick which is essential for me making 5 lunches each day!
