I know ceramic-coasted pots are a big fad right now. Heres my advice for using them: - Ask pointed questions and do pointed research about what the ceramic coating is made of. Many contain toxic heavy metals. You may think your pots and pans are healthy, but they may not be. - Find out what the base metal is, Many of the current green ceramic-coated products have a base of aluminum. Im not comfortable using any pot or pan containing aluminum, as the heat can cause aluminum fumes to leak through the ceramic coating. If you can find a ceramic product whose base is stainless steel, thats a much better option. (Xtrema is one brand I like.) - Make sure the product doesnt contain plastic coatings, One of the most popular green brands has handles that are coated with silicone. Contrary to popular belief, silicone is NOT a healthy alternative. It has never been officially studied, but studies by third-party organizations found silicone does indeed release toxic chemicals into the food when it is heated to high temperatures. Many of these chemicals are cancer-causing. I avoid silicone for any high-temp use, I have a single silicon mold which I use for bath bombs made with zero heat and in which the product does not remain very long, but I confess im also trying hard to find an alternative. - Check the manufacturers website for statements about toxicity. Most reputable manufacturers have a statement; those who are not reputable do not have such a statement. After doing a lot of research, i chose to continue using cast iron mostly and stainless steel occasionally. I have no reason to regret that decision, especially after doing deeper research on the alternatives.
