I love Thai food, and there is no place to get it in Texarkana. Yesterday while driving through NE Texas, I spotted a Thai restaurant in of all places, the fairly redneck town of Mt. Pleasant. Who would have thought? LOL. But also yesterday I discovered this Swanson Thai broth in the supermarket, so this morning I am making my favorite Thai soup. To the broth I added: onions, garlic, more ginger, sweet peppers, carrots, mushrooms, diced firm tofu, lime juice, and coconut milk. It smells divine, and I cant wait to eat it! And it is totally vegan.
