I made a rolled meatloaf today. Kinda like a stuffed one, but different. I used my own recipe for the meatloaf itself and the filling was of my own concoction. It has the Hubble tick of approval so I will definitely be making it again. -------------------- Rolled Meatloaf Meatloaf Ingredients: 350gm Beef Mince 350gm Pork Mince 2 eggs 1/2 Breadcrumbs (may need more to get to the right consistency) 1 tbs crushed garlic 1 onion finely diced 1 tsp ground cumin 1 tbs parsley 1 tbs chives 1 tbs lemon juice 1 tsp seeded mustard Filling ingredients: 1/2 Carrot cut into fine strips 1 small capsicum cut into fine strips Feta cheese Handful of baby spinach Grated cheese to put on top Combine all of the meatloaf ingredients together in a bowl and mix well (get your hands in there and get smooshin). You want it to be a little bit sticky and to hold together well. Turn it out onto a big piece of baking paper and press it out into a square about 1.5-2 cm thick. Spread out the filling ingredients on the meatloaf square leaving 2 or 3 cm around three edges. Using the baking paper as a lever, roll the meatloaf up as though it were a giant sushi roll. Press in both ends of the giant meat cigar to seal them off. Roll it up in the baking paper and press firmly. Refrigerate for at least an hour to help keep its shape. Please carefully into your slow cooker pot on top of some fresh baking paper, sprinkle grated cheese over the top of the meatloaf and cook on low for 6-7 hours.
