I posted a while back that I was ready to try something with my whole wheat flour I purchased. It wasnt exactly the right time of day to make brownies, so I gave it a go with pancakes.....and well, the results were PERFECT. :) notice next to each ingredient is listed an alternative ingredient. I used the alternative things and they turned out awesomesauce!!!! Recipe and instructions below: CLEAN EATING WHOLE WHEAT PANCAKES: 1 1/2 cups Whole Wheat Flour 1 tbsp baking powder 3 tbsp of raw sugar or brown sugar -->1 tbsp Agave organic 2 egg yolks 2 egg whites 1 1/2 c of milk ---->1/2 cup of 2% milk and water to achieve consistency 3 tbsp of oil------>3 tbsp of All Natural Applesauce *Makes 24 small pancakes Go ahead and separate egg yolks, from whites. If youre not sure how to do this, go to google or pinterest, theres so many easy hacks for doing it. Start by mixing together flour, baking powder, agave, egg yolks, milk/water and applesauce. *When it came to the milk, I actually added 1/2 cup, and then just added water and stirred and kept adding LITTLE by little until I achieved consistency (it should look like cake batter consistency). I then added 1 tbsp of cinnamon. Set mixture aside. With a fork or whisk, beat whites in a separate bowl until a little fluffy (til its full of little bubbles). Use a spoon and fold egg whites into your pancake mixture. Heat griddle or pan to medium heat. Enjoy! Extra tips: ->Why applesauce you ask? I actually have coconut oil that Id like to use BUT since I was low and like to save that for my veggies, and applesauce (natural of course) has been a long time stand in for oil in all kinds of baked goods, I thought Why not pancakes too? It works perfect! ->Why not use as much milk? Well, we get enough dairy in this house and all the milk does is help make a creamy base and part of the browning agent in alot of baked goods. Pancakes dont seem to have a issue with either so I cut it back and replaced with water. You can use almond milk, coconut milk/water, or just plain water....the possibilities are endless. -->Also, we all know how fast pancakes start to cook when the pan is good and hot. Turn it down a notch or two once you get going and they shouldnt burn. :D *Not that Ive ever really burned a food.....right? Notice I used a little Christmas themed skillet someone gave me a long time ago, and Ive been wanting to use it. No, Im not pushing for Christmas in July (well leave that to Walmart), but I love the little portion sized pancake idea, and it was a success. My kids loved them! Of course they cover them in syrup and thats a different story and we are working on that. But for wholesome ingredients, that didnt take long, and CAN BE FROZEN FOR A grab bfast on the go, AND healthy----->You cant beat it!
