I received a handy little gadget at Christmas called a Veggaghetti... you can see it in the picture below. There are two sizes of blades on the shaft and you simply screw the vegetable into the top and out comes vegetables shaped like noodles. Ive used carrots and zucchini, but you can use potatoes, sweet potatoes, squash, cucumbers etc. You can use the noodles it creates in salads, wok fries, steamed or boiled. You can add any sauce or simple toss in oil. In the middle picture, I used the thinner spaghetti like needle cutter, and added scallops, Asiago cheese and fresh basil over steamed zucchini noodles. In the last picture I used carrots and zucchini wider noodles with mushrooms, fresh basil and feta cheese. Both were delicious!
