My favorite as a child, was the angel hair pasta with two gigantic meatballs, smothered in this amazing sauce Here you are! Tomato Gravy 3-16oz Tomato Sauce 9-12 cups water 1 lg.can Crushed tomatoes 1/2 bell pepper chopped finely 1 lg. onion chopped finely 1 stalk celery chopped finely 6 cloves garlic chopped 1/4 cup parsley Salt and Pepper to taste 1 c. Parmesan cheese(optional) Put 2 T. olive oil in a large pot and cook all the veggies till tender. Add the sauce, water, tomatoes and other ingredients. I sometimes add a some garlic powder and onion powder because the real stuff doesnt always have a strong flavor. Then bring it to a boil and turn it down to low and cook several hours. Stir occasionally because it will burn. ********************************************************************** Meatballs 3-lbs of ground chuck (sometimes I use more) 5 slices of white bread (soak in milk enough to cover the bread) 3 eggs 1 stalk celery finely chopped 1 lg. onion chopped finely 5 cloves of garlic finely chopped 1 1/2 parmesan cheese 1/2 c parsely Salt and Pepper to taste. Now at this point Mom B would always take a pinch off and taste it to see if it was seasoned properly. Well, I dont do that but I do pinch off some and put it in the microwave for about 30 seconds. I cook the veggies in some olive oil then add to meat. Squeeze the milk out of the bread add to meat along with the other ingredients. Mix it with your hands working it for several minutes. The more you mix it the better the ball is in texture. Now at this point Mom B would always take a pinch off and taste it to see if it was seasoned properly. Well, I dont do that but I do pinch off some and put it in the microwave for about 30 seconds. Roll the balls into the size of a ping pong ball or larger if you like. Line a baking pan with foil spray with Pam and then put your balls on it. Bake at 350 till done about 15 minutes.
