I want to take a minute to introduce Prudence Christine!! She is the mastermind behind most of these amazing recipes well be sharing over the next week and a dear friend who was generous enough to offer her time to us this week! She goes by Pru and is a stay at home mom for two picky eaters ages ten and two! Although she has a degree in education, her current passion is creating healthy family meals that are inexpensive and easy to make. Who has time to spend an hour in the kitchen?! Not her! She frequents books, blogs, asks her Nana way too many questions, and experiments weekly all for the purpose of being able to feed the ones she loves something new and healthy.
