I went to the local meat market today after I found out they carry organic, grass-fed beef. I had forgotten how good fresh meat (not previously frozen) is! I made a taco salad and used the ground beef to make tacos. Of course, I had to load it with veggies, so I added to the meat some onion, corn with red pepper and Mexican seasonings. Also found some organic taco shells at the grocery store. We piled them high with the meat mixture, lettuce, avacado and picante sauce. Yum!!
