If youre still trying to figure out what to make for your 4th of July celebration? Check out this Socca Pizza! Socca is a popular European flat bread that is both gluten-free and vegan. Made from chickpea flour, its also rich in protein and fiber, so it makes a healthy and deliciously filling meal. I like to turn it into pizza. The crust takes less than two minutes to whip up and 7 minutes total oven time after a one hour rest. You can keep the dish vegan by using only veggie toppings and vegan cheeses (caseine free) or add cooked meats for a more traditional pizza experience. The crust is not your typical, dry, bread. Its sturdy, but the texture is somewhere between a not-so-dense polenta and a pancake. Itll be slightly moist, but the flavor is bready and outrageously delicious. SOCCA PIZZA For the crust: 1 cup Chickpea (Garbanzo Bean) Flour 1/4 tsp Pink Himalayan Salt 1/4 tsp Garlic Granules (or to taste) 1 Cup Tepid Water 2 Tbsp Melted Coconut Oil or Extra Virgin Olive Oil - Whisk everything together in a medium bowl until the consistency of pancake batter. - Set aside for 1 hour. - Set oven to Broil and heat an ovenproof skillet (cast iron is great) for round crust or a small thick gauge jelly roll pan for square until really hot, about 7 minutes. - Carefully remove pan from oven and pour batter in. It will be thin. - Place 8 below broiler and bake for about 7 minutes or until beginning to brown on top. - You can eat it like this, at this point. Plain, with butter, tapenades, mashed avocado or any other toppings that catch your fancy. OR -Top the baked crust with tomato sauce, vegan shredded cheese, sliced tomatoes, sliced COOKED lean sausage and basil leaves, or toppings of choice. - Return to broiler for 2 minutes. - Slice up, sprinkle on the hot pepper flakes and dig in! This is one of the healthiest, guilt-free pizzas youll enjoy over and over again!
