Im in a bit of a muffin making mode at the moment, I guess just trying to find some yummy healthy stuff for my kids lunch boxes. So today it was Strawberry Yoghurt Muffins: 1 cup chopped strawberries 1 & 3/4 spelt flour (white or wholemeal or mix of both) 3/4 cup coconut sugar 2 tsp. baking powder 1/2 tsp. baking soda 1 tsp. cinnamon pinch of salt 1/4 cup melted butter 3/4 cup yoghurt 1 egg 1 tsp. vanilla extract 1.Preheat oven to 175 degrees Celsius and line or grease muffin tin. 2.Mix dry ingredients together (flour, sugar, baking powder and soda, cinnamon & salt). 3.Mix wet ingredients together (butter, yoghurt, egg and vanilla) and add to the dry mixture. 4.Add the chopped strawberries and gently fold until combined. 5.Divide the batter into the muffin holes. 6.Bake for 20-25 minutes. PS. I used the mini muffin tins to make cute little ones... perfect for the kids. But of course you can use the big muffin tins too.
