Im not a huge fan of frozen raw veggies to save for later use, although they certainly have their place in cooking up quick meals. I am, however, much more in favor of oven-roasting veggies as a great way to use them up quickly and creatively in cooking (throwing them on pizzas, pasta dishes and more). The great thing is that you can also freeze oven-roasted veggies for the same purpose, but youll get a much smokier, more complex flavor when you go to use them at a later time.
