Im working a late-shift tonight, so Ive had a busy morning. Grocery store by 8, home by 8:45 to make a mojo marinade for Cuban Roast Pork for Christmas dinner. Once that was in the refrigerator, Ben and I started breakfast. We had leftover Italian sausage from last nights dinner. Ben found a recipe for a delicious frittata from Feed Me Phoebe. Of course, we tinkered! We used hot Italian sausage, but you could mix it with mild or go all mild. We also used dried oregano instead of fresh and skipped the peppers. I think it was a success and it was tons of fun cooking with Ben! I think we started a new Christmas Eve tradition. This would be a good recipe to involve younger kids in if you want to make it for your holiday breakfast. They can help stir the eggs!
