In honor of UK Mothers Day, Im making my favorite mom dish Pork Chop Casserole (except with chicken because my husband isnt a fan of pork) I dont really have a measurement system this is typically a meal made in a 9x13 pan for a family of four but Ive had to make adjustments since were only two. Ingredients: 3-6 Potatoes 1 pk Mushrooms 1 Onion 1 pk Liptons Onion Soup Mix 1 can of cream of mushroom soup (if you make this in a 9x13 opt for the family size can) 3-6 Pork Chops (or Chicken Breasts) Directions: Spray pan with non stick spray and layer slices of potato mushroom and onion. Spread half of the can of mushroom soup over the layers and sprinkle half of the onion soup mix (or just enough to coat if using a smaller pan) a pinch of salt and pepper. Repeat once. I like to rub the Pork Chops with a bit of season salt, salt and pepper then throw in a hot skillet just long enough to brown both sides and place on top of the layers. Cover with foil and bake for two hours at around 300-325F (Im still working on exact temp transitioning to Celsius is a bit weird. Plus my mom never wrote it down so this is just from memory) I like to pair it with something green on the side, tonight were trying roasted brussel sprouts.
