In order for people to see the changes I make I thought maybe I should post what Im doing over the next ten days. Right now I am required to eat as much gluten as I can stand so that when they test me they can get an accurate picture of how my body reacts to it. For those who dont know what gluten is, its a substance found in wheat, barley, and rye. Gliadin is a protein that comes from gluten. People with celiac disease have an autoimmune reaction to this protein, causing the celia and villi (the hair-like substance in the intestines that grab the nutrients out of the food we eat) to swell up (inflammation), get heavy and fall over smoothing into the intestinal wall. This means the damaged parts of the intestine are not absorbing nutrients which are an essential part of keeping the body functioning. So right now I am eating and drinking anything I want but it is causing abdominal pain instances where I am literally sprinting to the bathroom, lots of gas and bloating. After the test I will be doing whats called an elimination diet. This is where I restrict a bunch of foods for a few weeks and then systematically add one food back at a time to see if I notice any reaction to it over a 48 hr period. This is going to help me figure out if there are other foods that are causing problems in my body. Tomorrow I will weigh myself, record what Im eating, how Im feeling, what my pain level is, what my activity levels are,and what my mood is like.
