In response to many requests, here is the recipe for the Tomato, Ham and Mushroom Pie (from the pictures I just posted). 1 pie crust (you can use frozen or make your own) 1/2 lb ham -diced (preferably not deli ham due to liquid content) 4-6 button mushrooms -sliced 1/2 medium yellow onion -thinly sliced 1 cup shredded cheese (I like Gouda...its "good-a" -sorry Had to!) 1 tbs dijon mustard 2 tomatoes -sliced thinly (large plum tomatoes work well) 1 egg 1/3 cup half and half 1 tbs fresh basil chopped Heat oven to 425. Brush pie crust with mustard and sprinkle 1/2 cheese into bottom of crust. Sautee ham, onion and mushrooms until onions are tender and all liquid is gone. Spoon into pie crust. Using the tomatoes, make a single layer over the ham mixture. Beat egg and half and half together then pour over tomato layer. Sprinkle the remaining cheese and the chopped basil on top. Bake 20-25 min. Hope you all enjoy this!
