In the earlier post, I mentioned a gift of lemons from friends and my plans to preserve them. The lemons that is, not the humans!. The beautiful skins are now in a salt concoction waiting to become the stars of our citrus marinated olives. The abumdant quantity of leftover juice from these lemons, some of which is preserving the skins, had to be put to some other good use. And they were. A little went into much needed and satisfying drink - home made lemonade. Some went into the tandoori chicken marinade and the lamb kofta (dinner taken care of) and the rest, yes there was still quite a bit left, went into the ice cube maker for when I need some for my cooking. Or my G&T at sunset as we watch Mish and Bridget round up the rabbits. Summer!
