In true Autumn fashion, I just pulled Pumpkin Muffins out of the oven. The best part is that this recipe is actually not bad for you!!! INGREDIENTS 1 ½ cups Organic Spelt Flour 2 1/2 teaspoons cinnamon 1 1/2 teaspoon ground ginger ½ teaspoon nutmeg 1/4 teaspoon ground cloves 1 teaspoon baking soda ¼ teaspoon baking powder ½ teaspoon salt 2 eggs ½ cup unrefined coconut oil 1/4 cup honey 1/4 unsweetened apple sauce ½ teaspoon vanilla 1 cup pumpkin puree Preheat the oven to 350 degrees. In a large mixing bowl whisk the dry ingredients together. Make a well in the middle and add the whisked eggs, oil, apple sauce honey, and vanilla. Stir until blended but do not over mix and Fold in the pumpkin puree. I greased the muffin pan with some organic unsalted butter. Bake the muffins for 18 – 20 minutes. Check with a toothpick to see if they are done. Poke the muffin; If it comes out clean, you are good to go.
