It is nights like tonight that make this business awesome! What was thought to be a possible slow Saturday, turned out to be just a late dinner night for customers. Though what made it even better was everything they were ordering! Scallops, the one thing I thought might be coming off the menu with how limited orders have been...have now been saved! Salmon...one of my favorite fish to prepare from fabrication to plate! Taking a whole alaskan king salmon, fabricating it, then turning it into something great for people to enjoy...well there isnt much that compares to the simple beauty it becomes. Then there is the Farfalle pasta with shrimp, which not many realize how much work actually goes into a simple pasta dish...as it requires a great deal of preparation to make the bisque in which gives it that unique flavor, throw in the fabrication of the whole shrimp I get, and then the final plating...well there is just a lot to it for being pasta when it comes down to it. Now we move on to the Apple Dumplings! My favorite fall dessert...tonight it seemed everyone went for it and again it is something simple in which actually requires quite a bit of work to make possible. You must feel the apples, core the apples, make the dough, roll the dough, make the simple syrup, wrap the apple in the dough, and then you must sample the dumplings (the hardest part :-) of it all). So that about sums up the night, sort of, as there was a great deal of prep work done for tomorrows brunch! Schnitzel, spatzle, apple sauce, biscuits, cookies, braised cabbage, potato pancakes, french toast, egg prep, and the list goes on. It is absolutely crazy how much time, effort, and emotion goes into creating everything from scratch..pared to cooking everything that comes already prepared for you or at least halfway prepared for you...which we will always and forever prepare everything from scratch in my kitchen. :-) Hope everyone is having a great weekend!
