It was great to receive all the comments to the photo of our homemade whole meal bread, including the requests for the recipe. Here it is: 1) In a sufficiently large bowl, mix about 500gr of white flour with some 150gr of brown flour, 50gr of sourdough flour and 100gr of rye or wheat kernels (these may be difficult to get in Tanzania and many other countries, but you can use othe ingredients such as müesli - if you dont like the raisins and other fruits in your bread, feel free to pick them out ... ). A bit of whole meal spelt flour is also good. 2) Add a teaspoon or so of salt, some olive oil (a spoonful), and a small package of yeast (7gr). 3) Add about a litre of lukewarm water (easy to make do in a microwave) and with a spoon, mix the ingredients together. 5) knead the dough until smooth (for about 10 minutes - longer if you want to get rid of much stress and irritation over many maybe otherwise impossible problems - therefore forget about the automatic kneading machines now on the market ... ). 6) Leave the dough in the bowl covered with a damp cloth, for about 40min. 7) Knead the raised dough down and let it raise again for about ten minutes. 8) Knead the dough a third time and form it into a loaf or loaves of bread and put them on a baking rack again covered by a damp cloth. 9) At the same time, dont forget to preheat the oven to 250 degrees. 10)When warm enough, place the loaves (showering them with cold water makes the crust more crisp) in the middle range of the oven and lower the temperature to 210 degrees. Bake the loaves in the oven for about 40 minutes. They are done when you hear a hollow sound when you tap them on the bottom. 11) Let the bread cool on a rack. PS: in order to save on the maybe difficult to find sourdough flour, you can keep a bit of the dough for next time, for example in a cup (add a bit of water) and leave it in the refrigerator.
