Italian sausage and 3 cheese lasagne with spinach: Will need 250gram frozen spinach, nutmeg, parmesan cheese, mozzarella cheese ricotta cheese, garlic olive oil, tomato paste tomato pasta sauce red wine,stalk of celery, 1 onion, 1 carrot; butter, milk plain flour: Perhaps read recipe first before ensuring have all the items 6 Italian sausages ( we have continental without fennel, traditional pork and fennel with chilli or traditional pork and fennel without chilli) Make tomato sauce: olive oil, medium onion chopped finely, carrot chopped finely,1 stalk of celery finely chopped, 2 cloves crushed garlic, 1/2 cup dry red wine,1/4 cup tomato paste, 700grtam tomato passata or pasta sauce, parsley or basil. Heat oil in large saucepan add onion and vegetables and stir until veggies soften. Add garlic stir for one minute. Add wine until almost evaporated. Discard parsley . Add paste stir for 3 minutes, Add sauce simmer uncovered for 15 minutes. Make cheese sauce: 50 gram butter 1/3 cup plain flour, 2 cups 500ml milk one and 1/2 cups of finely grated parmesan cheese. Melt butter in medium saucepan add flour cook stir until mix thickens and bubbles. Gradually add milk stir until mixture boils and thickens. Reduce heat cook and stir 1 minute. Remove from heat add cheese stir until melted. Preheat oven to 200 degrees C or 180 fan forced. Cook sausages in large fry pan until browned all over drain and slice thinly. Combine 250 gram of frozen spinach thawed and drained with ricotta ( 250 gram) nutmeg,1/4 cup parmesan and 1 egg to medium bowl. Spread 1/2 cup of cheese sauce over base of 20cm by 30cm ovenproof dish. Top with 2 pasta sheets or fresh lasagne sheets ( will need about 6 sheets) Sprinkle half the sausage mix cover with 1 cup or tomato sauce and half the remaining cheese sauce. Top with 2 pasta sheets. Spread remaining spinach mixture over pasta sprinkle with remaining sausage. Spread with 1 cup of tomato sauce then remaining cheese sauce. Top with remaining pasta , then half the remaining tomato sauce, top with 250gram of mozzarella spread with remaining tomato sauce. Bake the lasagne covered for 30 minutes uncover for 10 minutes or until browned lightly stand 10 minutes before serving.
