Its that time of spring, our hens they are a-laying! Farm fresh eggs combined with our goat milk makes a delicious quiche. And, because one of our crew is gluten free we just had to make the crust with bacon and cheese. Crust: 8 slices of cooked bacon crumbled combined with 4oz shredded cheese. Press into a greases 9 pie plate. Innards: About 1 cup chopped up ingredient of your choice. Today we made three quiches; one with broccoli, one with sweet bell peppers, and one with mushrooms. Ham, spinach, or other veggies/meats work well, too. Place on top of crust. Batter: Mix together 1/2 cup flour (gluten free flour works great, too), 1 tsp salt, about 1/4 cup finely chopped onion, 2 T melted butter, 4 farm fresh eggs beaten, and 1 1/2 cups fresh raw goat milk. Pour over innards and crust. Bake at 350 degrees for 35-45 minutes. Check that center is set. Ring the dinner bell and get out of the way!
